March Recipe.....
|
Stuffed Flank Steak. With a sharp knife, score both sides of a 2lb. flank steak. Combine a 1/4 cup of red wine,1 tsp. rosemary and 2 tbs. of oil in a glass baking dish.Add meat and turn to coat.Cover and refrigate 8 hours.Heat oven to 425. Slice 2 red bell peppers,1/2 lb. mushrooms,and 1 large clove of garlic.Saute in pan and 2tbs. oil until tender.Drain meat and sprinkle both sides with salt and pepper. Spread vegetables on meat and roll up. Tie in several places. Put, seam down, in roasting pan.Cook 40 min. Let stand 10 min. before slicing. Serves 6.
